Veggie Fajitas.... an easy mid week dinner!


Quick, easy and very very satisfying!

I know it's Friday - but this is a recipe from earlier this week...

Veggie Fajitas


peppers, onions and mushrooms

Fajitas spice mix - if you buy the spice mix such as El Paso, it will cost you points, but if you just buy Fajita spice mix which will be by the other herbs and spices, it's no points! Bargain!

Tortilla Wraps - each medium wrap is 3 points, but 2=7 and 3=10)

(WW wraps are slightly less, 1=3, 2=5, 3=8, I buy very few of their branded products but this is worth it if you are short on points!)

Toppings Depending on your points - choose from:

Salsa (0)

Jalapenos (0)

30g Sour Cream (2) or fat free natural yoghurt (0)

30g Low fat guacamole (1)

30g Low fat grated cheese (2)

1.Fry the pepper, onion and mushrooms and sprinkle over the fajita spice until softened and not too much juice

2. Wrap the wraps in tinfoil and heat in a preheated oven.

3. Serve and choose your toppings
