Mushroom and Bean Hotpot


Weigh night....... and I've gained AGAIN! NOT IMPRESSED! I did go a bit mad on Saturday night - wine, crusty bread, delicious paella, desert and a gorg cheese course followed by coffee and chocolates! I blame Phil for turning 50! (and the fact that I'm greedy!) To combat this I am making a commitment to lost 3lbs next week I am going to blog everything I eat for the whole week - breakfast, lunch and dinner! (and snackages!) .... so watch this space...(and wish me luck!)

Tonight Matt made Mushroom and Bean hotpot.... it was delicious

serves 3 -4

Mushroom and Bean Hotpot


Oil spray

700g chestnut mushrooms, roughly chopped

1 large onion, finely chopped

2 tbsp plain flour

2 tbsp mild curry paste (Matt used Rogan Josh)

150ml veg stock - made with one stock cube

tin chopped tomatoes

2 tbsp tomato puree

2 tins beans, butter and kidney (or similar)

3 tbsp mango chutney (optional - if using add 7 points) (we didn't use and it was still delicious)

1. heat the oil in a large pan over a low heat and fry the mushrooms and onion until the onion is soft and dark golden. Stir in the flour and curry paste and cook for 1-2 minutes, then add the hot stock, tomatoes, tomato puree and beans.

2. Bring to the boil, then simmer gently for 30 minutes or until most of the liquid has reduced. Stir in the chutney (if using)and serve.

  1. Made the mushroom and courgette lasagne , it was yummy, got six portions out of it so have some for lunch and some in the freezer. 2 weeks meat free , can't say I'm missing it yet. Did you gain by much ??
