Chicken stuffed with black pudding wrapped in parma ham!
Didn't want to buy a big haggis as we're trying to be good and I hate waste, so I bought some Clonakilty black pudding instead! (Not very Scottish I know!!!)
Ingredients
2 chicken breasts
4 slices parma ham
60g Black pudding
1 apple
150ml white wine
1 onion
1 stock cube
2 tbsps gravy granules
I served with 400g potatoes and a medium turnip.
Method
1. Preheat the oven to 180 degrees. Slit a pocket in each chicken breast, stuff with half the black pudding and wrap each breast with 2 slices of parma ham.
2. Chop the apple and onion into wedges and scatter into a casserole dish. Add the stock and white wine and use as a bed for the wrapped chicken breasts.
3. Cover with tin foil and place in the oven for 30 minutes.
4. While cooking, boil 400g of potatoes and a turnip in two separate saucepans.
5. After 30 minutes, take the foil off the chicken, drains the juice into a saucepan, turn off the oven and put the chicken back in the oven until you're ready to serve.
6. Boil the juice, add a bit of water if needed and stir in 2 tbsps gravy granules to thicken.
7. Mash the potato and turnip and serve both with the chicken, gravy in the side!
