Singapore noodles
22 propoints per recipe, 11 per person
110g noodles
1 tsp oil
230g prawns
2 cloves garlic
2cm piece ginger
1 onion, cut into half moons
1 red pepper, thinly sliced
2 tsp curry powder
1 tsp tumeric
250g beansprouts
2 tbsp soy sauce
2 eggs, beaten
2 red chillies
2 limes, quartered
150g pork fillets, cubed (I omitted this so if using it will be additional points)
1. put the noodles in a saucepan with boiling water and a pinch of salt and bring to the boil until soft and then drain.
2. heat the oil in a wok and fry the pork if using until it is browned and just cooked through and then tip onto a plate. Add the prawns and fry until cooked. Rinse out the wok.
3. Add a little more oil to the wok and fry the garlic and ginger until light brown. Add the onion and pepper and cook until just beginning to soften, then add the spices and cook for a minute. Add the bean sprouts, noodles and about 2 tbsp water and toss everything together.
4. Add the soy sauce, some seasoning and stir for another minute. Push the noodles to one side of the wok and drop in the eggs. Cook, stirring for 1 minute through the noodles.
5. Add the prawns and pork (if using) into the noodles and toss until warmed through. Serve with lime wedges to squeeze over.
