Apologies about the delay with these tasty treats! Fell asleep after I ate them on Friday and then was out and about all weekend... that's another story - which won't bode well when I hop on the scales tomorrow. I'm dreading it. It included a Chinese New Year with the lovely in-laws and I have a fab recipe for schezuan Beef from Mil...it was healthy but voluminous - and the drinks flowed! I'll post the recipe tomorrow. Now, are you like me and already thinking ahead to the weekend? This is a great Friday or Saturday night treat - low in points and still feels dirty! You may think pizza and chips are off the menu when eating healthy but think again.... the average slice of pizza will set you back 8 pp each - the whole goats cheese pizza below is 9 points!
Red Onion and Goat's Cheese and Chips
Total points per person 17 (8 for the chips and 9 for the pizza)
There are a number of options for the pizza base - I've used pitta breads in the past, but they can be quite thin and one pitta will set you back 4 points. For these I've used Warburton's Soft brown sandwich pittas - one for 5 points, two for 9, they are thick and crisp up in the oven!
Warburton Pitta (5)
Passata - (0) it is no points so use enough to spread over the whole pitta
30g light mozzarella cheese - grated (1)
1 red onion, sliced
A few splashes of balsamic vinegar
Oregano
40g Goats cheese, sliced or crumbed into chunks (3)
1. preheat the oven to 160 degrees
2. spread the passata onto the pitta and sprinkle some oregano and some of the grated mozzarella onto the passata
3. Heat a frying pan and stir fry the red onion with a few splashes of balsamic vinegar until softened
4. Spread the onions evenly onto the pitta, place the goats cheese on top of the onion and sprinkle with the remainder of the mozzarella and some black pepper
5. whack in the oven onto a wired tray (like the grill tray). Having it on wired tray will help distribute the heat evenly and crisp the base of the pizza
6. the pizza is cooked when the base is nice and crispy, the passata heated through and the cheese bubbling... should only take about 5 minutes

In the past I've just chopped them and repeat as above but leave out step 3 - they can be piled onto the pitta raw.

Mustard Chips
200g per person for 4 points (Use a good floury spud - it really makes all the difference - try King Edwards or Maris Piper.
1 tbsp of sunflower oil per 200g for 4 points each tbsp (Seems a lot but this is a treat! You may think olive oil is better than sunflower oil, but when heated to a high temperature, Olive oil decreases in nutritional value and it becomes less healthy)
1 tbsp wholegrain mustard
1. leave the skins on the potatoes and chip, bring a saucepan of water to the boil, season and add the potatoes, par boil for about 5 minutes.
2. meanwhile pour the oil into a baking tray and place in the over to heat. (preheated oven about 180 degrees)
3. when the potatoes are par boiled, drain and transfer into the hot oil. add the whole grain mustard and toss so the chips are coated with the oil and mustard grains.
4. turn down the oven to about 160 degrees and cook until golden on the outside and fluffy and soft on the inside.

ReplyDeleteOh good luck - with all this horse meat scandal - maybe it's best to go veggie. We are sticking with it in the week and enjoying meat on the weekend.
