A breakfast treat - great for a hangover


Hangover healthy breakfast Serves 1

100g potatoes, cubed(2)

3 medallions of bacon (2)

1 crumpet (2)

Handful cherry/plum tomatoes (0)

1 egg, poached (2)

mushrooms (0)

1 tsp butter (1)

1.spray a non stick pan with low fat oil and sautee the potatoes - they will be brown on the outside and cooked on the inside - this will take about 20 minutes. Shake the pan every now and again so they are evently browned.

2. grill the bacon

3. melt the butter and fry the mushrooms, when they are nearly cooked, put to one side of the pan and add the tomatoes to the other side to cook for a few minutes.

4. poach the egg

5. toast the crumpet

6. assemble and eat
