Split pea soup
Rather high for a soup, but it was filling...
Serves 2

Ingredients
200g yellow split peas
1 medium onion, chopped
1 garlic clove, chopped
Seasoning
Few sprigs of mint
Spiced butter
1 garlic clove, crushed
1 spring onion, finely chopped
1/2 tsp coriander
Pinch of chilli flakes
Small handful coriander, chopped
20g unsalted butter
Method
1. Place the split peas, onion, garlic, mint and add about 2 pints of water. Bring to the boil, then reduce the heat and simmer for 35 minutes until peas are tender. Remove the lid about after about 30 minutes.
2. Meanwhile makes the spiced butter by placing all the ingredients in a bowl. I placed in the microwave for about 10 seconds until butter started to melt, stirred all the ingredients and then divided the butter mixture between 2 ice cubes and put in the freezer until hard again.
3. Whiz the soup and divide between two bowls, when you're ready to serve but the spiced butter in the middle of the bowl and stir through.
