Bean Tagine with brown rice
Serves 2
5 pp per serving
I served with 60g of brown rice per person
Ingredients
Tin red kidney beans
1 celery stick, halved
1 bay leaf
2 sprigs of parsley
Oil spray
2 onions, finely chopped
2 cloves garlic, crushed
1 red chilli, deseeded and chopped
2 red peppers, deseeded and chopped
1 tbsp paprika
Seasoning
Tomato Sauce
1 tbsp ground cumin
1 tbsp ground coriander
1 tin chopped tomatoes
1/2 tbsp sugar
Chopped coriander to serve
Method
1. Mist a pan with oil and fry the onion and garlic until soft, then add the chilli, red pepper and paprika and cook for a further 5 minutes.
2. Empty the tin tomato into the pan along with the sugar, ground coriander and ground cumin, celery, bay, parsley. Kidney beans, bring to the boil and simmer.
3. Season and cook covered for about an hour, remove the lid and cook for a further 15 minutes.
4. Sprinkle with coriander an serve! Ummm
