Falafel wraps

Ingredients
1 slice weight watchers bread, made into breadcrumbs.
1 400g can drained chickpeas
1 onion, chopped
2 cloves garlic, chopped
1 tsp each of ground coriander, cumin.
Juice of 1/2 lemin
Low fat oil spray
140g carrots, grated
90g lettuce, shredded
4 weightwatchers wraps
4 tbsps reduced fat houmous
Method
1. Preheat the oven to 160 degrees. Blitz the chickpeas, onion, garlic, coriander, cumin and lemon juice and then mix in the breadcrumbs and shape into 8 balls. Mist with the cooking spray and cook for 40 minutes.
2. Mix together the carrot and lettuce and spoon the salad onto the wraps. Top each wrap with 1 tbsp houmous and 2 falafels, halved, roll and serve immediately. If you are preparing in advance for lunch let the falafels cool before putting in the wrap.
