Lentil & Veg Soup

This doesn't look appetising, but it was........ Delicious actually! 



Serves 3 
2 pp per serving

Ingredients 
Low fat cooking spray
1/2 onion
1/2 celery heart, trimmed and finely diced
1 carrot, peeled and finely diced
1 courgette, finely diced
1 clove of garlic, crushed
1/2 tbsp tomato puree
1/2 tsp dried thyme
35ml red wine
200g chopped tomatoes (1/2 tin)
350ml hot veg stock( made with 1 cube)
1 400g can puy lentils, drained and rinsed

Method 
1. Heat a large lidded nonstick saucepan over a medium heat and mist with cooking spray. Cook the onion, celery, carrot, courgette and garlic, covered for 5-6 minutes. Stir in the tomato puree, thyme and cook for a further minute. 
2. Add the red wine and chopped tomatoes and cook for 1-2 minutes. pour in the stock and bring to the boil. Reduce the heat and simmer gently for 10 minutes or until the veg are tender. Add the lentils and heat through ( I blitzed half of it to thicken it up) and serve in warmed bowls.
