Leek & Potato soup

I like it chunky! 

Ingredients
400g potatoes, peeled and cubed 
2 leeks, trimmed and sliced
1 tsp butter
1lr veg stock made with 1 stock cube 

Serves 2 
Points value 6 



Method:
1. Melt the butter in a saucepan
2. Add the potatoes and leek and fry off for about 5 minutes.
3. Pour in the stock and add some pepper. Cook until spuds are soft.add more water if it looks very thick.
