Super mum Elaine Tate shares her chicken satay and fried rice recipe


Busy yummy mummy and sister extraordinaire - Elaine Tate has submitted this recipe, the first recipe containing meat! I have worked out the points value to be 15 per person and considering a single portion of fried rice from the chinese is 10pp and chicken satay is 18pp - this is not a bad alternative at all!

It will also taste much better because it won't have any msg in it. With Chinese new year around the corner (February 10th) - I will be on the hunt for an even lower points version and will also be uploading a delicious recipe for sweet and sour chicken.

Chicken Satay with Fried Brown Rice ( adapted from www.weighloss.com)

This recipe serves 2

Recipe Ingredients:

2 chicken breasts cut into thick bite size pieces

Brown Rice, 120g

½ yellow pepper, chopped into small pieces

½ red pepper, chopped into small pieces

½ cup frozen peas

4 wooden skewers

Satay Sauce (this serves 4)

½ Onion finely diced

1 tablespoon olive oil

3 tablespoons crunch peanut butter

½ teaspoon lemon grass (optional)

½ teaspoon chilli

½ cup vegetable stock

½ cup light coconut cream

2 tablespoons light soy sauce

2 cloves garlic

3 tablespoons brown sugar

propoints values:

Rice 12 pp, chicken 8pp, satay sauce 21pp (but because you only use half, I've calculated it at 10pp for 2 people)

Total pp for this recipe 30 so 15pp per person.

Recipe Method:

1. Boil the rice, and place in a pan which has been sprayed with oil, set aside

2. In a small pot heat olive oil and sauté onion for a couple of minutes. Turn heat down and add the garlic, lemon grass, if using, and chilli, make sure it doesn’t burn

3. Now add the peanut butter, ensure the heat is down low, and stir, this will melt. Add the vegetable stock. Keep stirring. Now add the coconut cream, soy and sugar

4. Keep stirring so it doesn’t stick and simmer for 5 minutes. If you like a more sweet satay add more sugar. If it is getting too thick add more stock. It needs to be thick but not too thick. Once it is the flavour you like turn off heat and set aside

5. Now place the chicken evenly through the skewers, quick spray of oil spray and grill on griddle pan, don’t overcook, turn every 2 minutes. Should only take approx. 8 mins to cook

6. Meanwhile, heat the pan with the rice and add the pepper and peas, stir frying for 5 minutes

7. Place fried rice mix on plate, then 2 skewers each and drizzle the sauce over. You only need ½ cup of the Satay sauce mixture for 2 people, so you will have some left over. This should keep for a few days in the fridge for another meal

  1. That's the peanut butter, but it really makes the satay sauce. Fabulous...even if I do say so myself. Anthony's turn to cook this Sat nite. Will let ya know what's on the menu later!!
