Happy Pear Dahl

Serves 2-3

20 weight watchers points per recipe 

Ingredients:


250g red lentils
1 red onion, thinly sliced
2 cloves garlic, peeled and grated
Small piece of ginger, grated
1 courgette, cut into thin moons
2 tomatoes, chopped
1 tsp salt
1 tsp cumin
Pinch of cayenne pepper
1/2 tsp turmeric
2 tsps curry powder
1/2 tsp black pepper
1 tbsp soy sauce
Juice 1 lime

Method:
1. Rinse the lentils in cold water.
2. Sauté the onion, garlic and ginger on a low heat until the onions are lovely and caramelised. (Stir regularly and add a bit of water if they start to stick)
3. Then add the courgette, tomato and half the salt. Cover and cook on a low heat. I left them for half an hour because I had time - the longer you cook them out, the better. 
4. Add the lentils, spices, salt, soy, lime juice and 1 litre of water and bring to the boil. Reduce to a low heat and simmer for about half an hour. Again, I was cooking this in advance so put it on a really low heat and left it for an hour with the lid on. Stir regularly so the lentils don't stick.
