Salmon en croute ..... A bit of poshness on a Monday
Um um ummmmm this is rather posh like, but very easy and only 12 pp each! Lush!!!
Salmon en Croute
Serves 2
12 pp per serving
Ingredients
2 salmon darns
50g low fat soft cheese
1/2 tablespoon pesto
50g puff pastry
Low fat cooking spray
Salt and pepper
300g potatoes
Broccoli
Carrots
Method
1. Preheat the oven to 180 degrees. Mix together the cream cheese, pesto and seasoning.
2. Par boil the potatoes in salted water.
3. Put the salmon fillets on a board and spoon over half of the cheese mixture on the middle of each fillet.
4. Roll out the pastry and cut in half to form a rectangle. Wrap each triangle around the middle of each salmon fillet and over the dollop of cream cheese and place on a non stick tray.
5. Drain the potatoes and put on a baking tray, spray with oil spray and season and put in the oven, after 5 minutes, put the salmon in the oven and bake for a further 15 minutes.
6. While the salmon and potatoes are cooking, boil the carrot and broccoli.
7. Eat!!
