I'm back... With some tasty treats!

Hello peeps, god it has been a while! The summer has flown by and a fun time had by all.... Lots of culinary experiences and a pound or two heavier but worth it all.  I have been active too so I guess it could be worse..... Trained for National 3 peaks and now Cardiff 10k. 

Have been stockpiling a few recipes over the last few weeks so you are in for a real treat! Happy cooking and remember if you have any delicious low fat recipes for the blog.... Send them my way! 


Pink Salmon and New Potato Salad
Serves 2
6 p&p per serving 

100 g Potatoes, New, Raw   
1 medium Courgette, chopped   
Watercress/rocket/salad leaves
1 can(s) (medium) Salmon, pink, drained   
1 tablespoons Mayonnaise, Reduced Fat   
1 medium Lemon, sliced into quarters   

  • 1. Cook potatoes in boiling, lightly salted water until just tender - about 15 minutes. 

  • 2. When cooled, slice potatoes and toss together with Salmon in Lemon Mayonnaise, add chopped courgette, and serve with a generous amount of watercress.

  • 3. Serve with lemon wedges.
Tip
Remove all the bones from the pink salmon.... We both had childhood memories at grandparents houses eating through these bones! Yuck!
