Courgettes coming our of our ears..... What to do with them?
We've had a fantastic crop of courgettes this year and it's been challenging coming up with tasty ways of using them. Best picked when small, but we were away for a few weekends and came back to massive marrows hiding sneakily under their ginormous leaves! Readers to the blog will know I hate waste so we've been having quite a lot of courgette recently!
Tonight I made courgette fritters and they WON'T be going on the blog! Matt described them as courgette puke on a plate and he wasn't wrong, while they tasted ok ( partly because we made a chilli onion jam to go with them), the consistency and texture was horrible.
Anyway enough about what didn't work and what I won't be posting.... Here was today's lunch:
Courgette and soft cheese Frittata
Serves 4
4 pp per serving
Ingredients
Low fat spray
1 red onion, sliced
1 garlic clove, crushed
200g courgettes, cut into chunks
6 large eggs, beaten
4 heaped tbsp of sweetcorn
100g soft cheese
Method:
1. Mist a frying pan with the spray and add the onion. Once softened add the garlic and courgette and fry for about 5 mins until veg are golden.
2. Add the egg to the beaten sweetcorn, season and add to the pan.
3. Place blobs of the soft cheese around the top of the frittata.
4. Cook over a med heat for about 5 mins and then place under a pre heated grill until golden and bubbling!
5. I had it with salad leaves.
