Sweet Potato & Butterbean Balti

Sweet Potato and Butterbean Balti (middle dish)

Serves 3

Ingredients

350g sweet potato, cut into half moon slices
low fat spray
1 can chopped tomatoes
1 garlic clove
2 tbls balti curry powder (or any curry powder)
150ml veg stock
1 can butter beans (410g), rinsed
1 red chilli, finely sliced
75g frozen chopped spinach (or a bag of fresh spinach)

Method

1. put the sweet potato on a plate and microwave on high for 5 minutes

2. heat a wide non stick frying pan and spray with low fat cooking spary. Transfer the sweet potato to the pan and cook for 20 minutes, turning over about halfway through when starting to carmelise.

3. meanwhile put the chopped tomatoes, garlic, curry powder, stock, butterbeans, chilli and frozen spinach into a saucepan. (if using fresh, put the spinach in about 5 minutes towards the end)

4. bring to the boil and simmer for 5-10 minutes, add the sweet potato and serve
