Roast tomato soup with cheese toasts

Serves 2

Ingredients
1kg tomatoes, halved
Low fat cooking spray
2 tsps caster sugar
2 tsps olive oil
50g low fat grated chedar 
A few basil leaves 
2 small crusty bread rolls

1. Preheat the oven to 180 degrees. Place the tomatoes in a  dish,season well and spray with the oil spray and roast for 40 minutes. 
2. Transfer the roasted tomatoes into a blender along with the caster sugar and olive oil (I also added some fresh basil) and blend until smooth. (I found it too thick at this stage so put in some boiling water to make it a bit thinner, check seasoning! 
3. Slice the rolls and grill, then top with the cheese evenly split and grill further until bubbling. 
4. Pour the soup into a bowl, season and top with basil leaves, serve with the cheese toasts.
