Garlicky Mushroom Gnocchi

Serves 2
6 pp per serving



Ingredients
Low fat oil spray
1/2 onion, finely chopped
1 clove garlic, chopped
350g mixed mushrooms, sliced ( I used chestnut and oyster)
175g pasatta 
125g spinach
250g gnocchi
1 tsp low fat butter/spread

Method
1. Mist a pan with the oil spray, add the onion and fry over a medium heat, stirring for 5 minutes until softened but not coloured.Add the garlic and fry stirring for 1 minute. Add a tsp low fat butter/spread
2. Add the mushrooms and cook stirring for 15 minutes until the mushrooms are golden and liquid has evaporated. Stir in the tomatoes and spinach and warm through.
3. Meanwhile add the gnocchi to a pan of boiling water and simmer for 2-3 minutes until the gnocchi rises to the surface. Drain then mix with the mushroom sauce and serve.
