Easy chicken traybake

Another easy one tray dish.... Saves on washing up and you can just leave it cooking and get on with other things! 

Serves 4
8 pp per person 

Ingredients
600g sweet potato, peeled and chopped 
2 red peppers, deseeded and chopped
2 yellow peppers, deseeded and chopped
Low fat cooking spray
2 tbsp whole grain mustard
1 heaped tsp clear honey
2 tbsps soy sauce
4 chicken breasts


Method

1. Preheat the oven to 200 degrees, spread the sweet potato and peppers onto a large roasting tray and spray with the low fat spray. Roast in the oven for 15 minutes. 
2. Mix the mustard, honey and soy sauce in a bowl. Cut shallow slits in the chicken breasts and marinade the chicken for 10 minutes. 
3. When the initial 15 minutes cooking time is up, toss the veg around the tray and place the chicken breasts on top of the veg and drizzle over the mustard sauce. Roast for a further 20 minutes until chicken is cooked through.

  1. Made this Thurs eve and it was delish. Threw in broccoli that needed using up too. Will defo use the marinade again!
