All in one spicy pork and rice

Easy peasy lemon squeeze ..... And easy on the washer upper too! Lean pork tenderloin with spicy rice and lots of veg... What more could you ask for? 


Serves 2
13 pp per serving 

Ingredients
Low fat oil spray
1/2 onion, sliced into wedges
250g pork tenderloin, cut into slices
25g chorizo, cut into thin slices
1 garlic clove, thinly sliced
1/2 red and 1/2 orange pepper, deseeded and sliced
50g green beans, cut into short lengths
1/2 tsp ground cumin
1/2 tsp ground coriander 
1/4 tsp hot chilli powder
120g basmati rice
350ml chickens stock made with 1 stock cube

Method
1. Spray the pan with low fat spray. Fry the onion for 2 minutes until softened and lightly browned.
2. Season the pork with the salt and pepper and add it to the pan with the onion and stirfry for another 2 minutes. Add the chorizo, pepper, garlic and beans and stirfry for another 2 minutes. 
3. Sprinkle with the spices and add the rice and pour over the stock and bring to the boil. 
4. Reduce the heat and simmer for 20 minutes until the rice is cooked and the liquid has been absorbed.

  1. I'm definitely going to try this! Might substitute pork for chicken/turkey though, I assume that would work? X
