Spicy Sausage & Butterbean Casserole
A posh sausage and beans, quick and tasty and 9 pp per serving.
I felt it needed some rice so served with 40g (dried) per person for an additional 4 points.
This would have been ideal for bonfire night!
Serves 4
9 pp per serving
Ingredients
8 low fat pork sausages
1 can chopped tomatoes
2 tbsps tomato puree
300ml pork stock
1 tbsp Worcester sauce
225g button mushrooms ( I used chestnut and halved)
225g baby onions, halved
1 green pepper, deseeded and sliced
1 tsp chilli sauce
1 can butterbeans, drained and rinsed

Method
1. Pre heat the oven to 180 degrees. I used a casserole dish for this and placing it on the hob, spray with low fat spray and brown the sausages.
2. Removing them from the casserole dish, chopped each sausage into four and set aside. Re spray the casserole dish and add the onion, pepper and mushroom and stir for a few minutes until they start to brown. Then placed the tomatoes, tomato puree,stock, Worcester sauce and chilli sauce into the dish along with the veg and bring to the boil.
3. Add the chopped sausages and butterbeans and seasoning and place in the oven for minimum 20 minutes. I have a few things to do, so I turned the oven down to 150 and left it in for 40 minutes.
4. Delicious!
