Pesto and Green Veg Gnocchi

Another fab filling veggie dish using 3 portions of green veg! We also had a shed loads of basil so made our own pesto using pine nuts, olive oil, basil and parmesan! Great way to use it up before it dies for the winter :) 

Serves 2
9 pp per person

Ingredients 
100g fine green beans
190g broccoli florets
250g fresh gnocchi
2 tablespoons pesto
30g low fat soft cheese
50g spinach leaves 

Here's the before and after pesto! 

Method 
1. Bring 2 pans of water to the boil. Add the green beans to one pan and cook for 3 minutes and then add the broccoli and cook for a further 3 minutes. 
2. Once the broccoli has been added to the first pan, add the gnocchi to the second and cook for two minutes until the gnocchi floats to the top. 
3. Drain the veg and the gnocchi, reserving 2 tbsps of the veg cooking liquid. 
4. Stir the pesto and soft cheese into one of the pans, add the spinach and stir until wilted. Then add the green beans/broccoli and gnocchi and the reserved liquid and stir til everything is coated and warmed through!  Check for seasoning and serve.
