Smoky Butter Beans and Spring Greens
This looks and sounds like real peasant food - but it was surprisingly yum!
Serves 2
17 pp per recipe (including rice)
120g rice
oil spray
200g spring greens washed and roughly chopped
2 garlic cloves , finely sliced
400g can butter beans , rinsed and drained
½ tsp cumin seed
1 tsp smoked paprika
tin tomatoes
1. Put the rice in salted water and bring to the boil.
2.Place a wide, lidded pan over a medium heat and spray with the oil. Add the garlic and when sizzling add the tin of tomatoes and bring to the boil.
3. Once boiling, add the cumin, paprika and butter beans and turn down the heat and simmer for about 10 minutes.
4. Toss the greens into the pan and put the lid on. When wilted, season and make sure the tomato sauce is evenly combined with the beans and the greens and serve over the cooked rice.
