Moroccan fish Tagine with lemon couscous

Delicious dish. 
Under the new flex system, fish is free! So fill your boots ...... 
As well as being super tasty, it's super simple and quick! This recipe is an adapted version from an old weight watchers magazine. 

Serves 2
Smidge of oil
Onion, finely sliced
1 red, 1 green pepper, deseeded and finely sliced
2 garlic cloves, peeled and finely sliced. 
1tbsp harissa paste
1 cinnamon stick
200g chopped tomatoes (or 1/2 tin)
200ml veg stock (made with 1/2 stock cube)
25g dried apricots, sliced
300g skinless cod fillets (or any meaty white fish), cut into big chunks
Coriander for decoration

For the couscous
120g couscous
100ml veg stock (made with other 1/2 stock cube)
Zest and juice 1/2 lemon. 



Method

1. Put a small bit of oil in a large pan and sauté the onions, after about 5 minutes add the peppers and cook for a further 10 minutes. Add a drop of water if needed and stir every now and again. 
2. Add the garlic and harissa and cook for another 2-3 minutes
3. Stir in the cinnamon, tomatoes, stock and apricots. Bring to the boil and leave to simmer for 5 minutes. 
4. Stir in the cod, cover and simmer for another 5 minutes. Discard the cinnamon. 
5. In the meantime prepare the couscous by putting it in a heatproof bowl and add the stock. Cover and leave sit for 5 minutes or until all the water has been absorbed. Fluff the grains with a fork and add the lemon ring and zest. 
6. Hey presto. Serve together!
