Couscous Goji herby salad

This is a variation of the recipe in the lovely Happy Pear book! It's bright, colourful, filling and tasty! 

15 smart points per portion, so a high lunch, we've had it as our evening meal too! 

Serves 2


Ingredients:
120g wholemeal couscous
50g edamame beans 
25g mint, finely chopped
25g parsley, finely chopped
15g chives, finely chopped
Mixed salad leaves for 2 
30g Goji berries
30g cashew nuts

For the dressing
2 tsps olive oil
40m soy sauce

1. Cook the couscous as per instructions. I sometimes make my couscous with 1/2 a veg stock cube... But just use water for this because the dressing is a salty soy sauce.) 
2. Dry roast the cashew nuts and set aside
3. When couscous has absorbed all the water, fluff with a fork, add the beans, berries, nuts and herbs and stir.
4. Mix the oil and soy and add to the couscous mixture. 
5. Arrange the leaves on the plate, and top with the couscous mixture.
