Brocolli, Sweet Potato & Ginger Soup

Great way to get lots of veg in one sitting! I was unsure about this at first and when I it cooked first, I thought it was going to be too gingery! But it wasn't, the consistency was quite thick, but I'd be careful about adding more stock because it already has a good pinch of salt. Perhaps use stock and leave out salt til tasting at the end!
1/2 onion
2 celery sticks
1 carrot
1 large clove of garlic
1 head of brocolli
150g sweet potato
Oil spray
Good pince of salt
Pince of ground black pepper
1 tsp ground cumin
2-3cm piece of ginger
3/4 litres of veg stock or water.
Method
1. Peel and roughly chop the onion, celery, carrot, sweet potato and garlic and chop the brocolli into small pieces.
2. Spray the pan with oil and add onion, carrot, celery, garlic and salt. Cover, turn down the heat and gently cook for 15 minutes, stirring occasionally.
3. Add the brocolli, sweet potato, black pepper and cumin and cook, stirring for a few minutes. Add the grated ginger and the stock, bring to the boil, then turn down the heat and simmer for 30 mins.
4. Remove from the heat and blend, check seasoning. If consistency is too thick add a little water.
