I've not had anything like this before and I have to say it was delicious. I served it on a bed of green salad and scattered a handful of croutons over the top for a crunchy texture..... Give it a go! um um ummmmmmmm
Smoked Salmon, lentil & Pomegranate salad
2 tsps extra virgin olive oil
juice 1/2 lemon
1 garlic clove, crushed
2 tsps roughly chopped tarragon
1 tsp clear honey
1/2 small red onion, very finely sliced
400g puy lentils, rinsed and drained
140g smoked salmon, ripped into strips
20g flat leaf parsley chopped
1 pomegranate, seeds removed
Handful of croutons
Serves 2
8 pp per serving (may seem a lot - but extremely filling)
1. combine the oil, lemon juice, garlic, tarragon and honey in a large bowl and season. Toss in the red onion, lentils and salmon and set aside to marinate for 10 minutes.
2. Fold in the parsley and pomegranate.
3. serve on top of a green salad (I also chopped up a yellow pepper) and sprinkle croutons on top.
Delicious lunch or light summer evening! Getting carried away now with the bit of sun shine!
