Monday night - first day back at work after more than a week off - something quick and easy is needed tonight. Decided on Smoked Salmon Linguine for 9pp per person. Light, filling and tasty - serve with green salad if you want to bulk it out.
Serves 2
9 pp per serving. I also grated a wee bit of parmesan cheese over the top for an extra point per person.
Smoked Salmon Linguini
125g Linguini
1 egg
60g low fat soft cheese
finely grated zest and juice of 1/2 small lemon
2 tablespoons of fresh chives
60g smoked salmon, sliced into strips.
1. Bring a pan of water to the boil and cook the pasta until tender.
2. Meanwhile in a small bowl, beat the egg with the cream cheese then add the lemon zest, juice, chives and smoked salmon.
3. Drain the pasta and return to the saucepan. Mix in the smoked salmon mixture, tossing well to mix thoroughly.... simples!!!
