Felt like a bit of a change tonight and it's the start of the holidays after all so I made some tapas! It's also a good way to use up left over bits in the fridge! I've not pointed these but have used as low fat ingredients as possible!
Tortilla
6 small potatoes, peeled and thinly sliced
1 onion sliced (not too thin but not really thick!)
glug of olive oil
4 medium eggs
1. Use a medium pan so that the ingredients fill it. Heat the oil in the pan and add the onions and saute for about 5 minutes until soft.
2. add the sliced potatoes, put on the lid (or cover with a chopping board) and cook for about 20 minutes on a low heat tossing occasionally.
3. beat the eggs in a bowl, season and when the potatoes are soft pour the egg evenly into the pan and keep on a low heat until the egg starts to cook.
4. place the pan under a pre heated grill and cook for a further 5 minutes until the eggs are cooked on top.
5. use a spatula to make sure the egg isn't sticking to the side of the pan and once you've done that the tortilla should shift in the pan when shaken. Place a plate on top of the pan and turn over to reveal a beautiful tortilla!
Chorizo and Mushroom
6" chorizo
punnet of mushrooms
splash of red wine
1. chop the chorizo into chunks and the mushrooms in halve.
2. heat a pan and dry fry the chorizo - you don't need any oil because the chorizo will release its own oil.
3. after a few mins and there's some oil released from the chorizo, add the mushrooms to the pan and fry for a few minutes.
4. add the splash of wine and reduce
Gambas with chilli sugarsnap peas
packet of raw king prawns
1 red chilli, deseeded and chopped
packet of sugarsnap peas topped and tailed.
clove of garlic, thinly slided
olive oil
1. pour a glug of oil into the pan and add the garlic, chilli and sugarnsap peas and stir fry, shaking the pan constantly.
2. you want the sugar snaps to still have a bit so after a minute, toss in the king prawns and stir fry until they change from translucent to a nice pink colour. They should still be nice and juicy!
Just made the tortilla.....added mushroons and leek! Yum! Yum!
