ALL TIME FAVOURITE LUNCH: Asian Broccoli salad in a sweet chilli sauce


You have to try this! It's delicious. Another of the Happy Pear's recipes.

Very filling and colourful and lots of chewing!


Serves 4

12 PP per person (the majority is the sesame oil - but it's sooooooooooo delicious!)

Ingredients

700g broccoli

1 red pepper

1 x100g pack baby corn

1 x bag beansprouts

40g sesame seeds

60g cashew nuts

Dressing

3 cloves of garlic

50ml soy sauce

1 tbsp paprika

a pinch of cayenne or chilli powder

3 tbsps of honey

100ml sesame oil

juice of 1 lemon

Method

1. Break the brocoli into very small florets, removing the tough stems. Cut the red pepper into fine strips and roughly chop the corn. Rinse the beansprouts and dry them in a salad spinner.

2. Toast the sesame seeds and cashew nuts together in a frying pan for a few minutes until lightly coloured.

3. Steam the broccoli for 5 minutes, then drain under cold running water. Put it in to a large bowl with the rest of the salad ingredients and mix together.

4. Peel the garlic and whiz in a blender with the rest of the dressing ingredients, then pour over the salad and toss gently. (If making the night before for work - take the dressing and the salad separately and dress before you eat it - it will stop it going soggy!)
