Lamb and Mint Burgers

Lovely jubley home made burgers! I opted to have them without the bap and some butternut squash wedges instead, but have pointed with a bap! Enjoy.... Lovely and juicy! 

8 PP per person, 12 pp if you have with a bap.
Serves 4

Ingredients
For the burgers:
Low fat oil spray
1 onion, finely diced
1 garlic Clive, crushed
500g lean lamb mince
2 tbsp freshly chopped mint ( I used mint I'd frozen)
Seasoning

For the mint relish:
2 spring onion, thinly sliced
4cm cucumber, diced
2 tbsp chopped mint
1 apple, cored and diced
2 tsps lemon juice

Serve with lettuce, tomato and wholemeal bap.

Method 
1. Spray the pan with low fat oil spray and heat until hot. Add the onion and garlic gently for 7-10 minutes until soft and remove from the heat. 
2. In a bowl mix together the lamb, mint, cooked garlic and onion, season and form into 4 burgers. (I actually made it into 8 so they were more like little sliders than quarter pounders and served 2 per person) 
3. Spray the pan again with low fat cooking spray and until hot. Add the burgers and cook for about 5 minutes on each side depending on thickness. 
4. Combine all the relish ingredients in a bowl and serve over the burgers in a bap with tomato and lettuce.
