3 lb loss this week:) celebrating with Chicken Korma

Yeah, I lost 3 lbs this week delighted, I have been very good but have still had some amazing meals :). 
So to celebrate I cooked a Chicken Korma. As a weight watcher this would be the last thing you'd order in an Indian restaurant because the curry alone is about 24 pp per serving !!!! This version is rich and creamy and very very tasty! 

Serves 4
6 pp per serving
I served with a side of mushrooms fried with low fat oil spray for 0 extra points and 60g (dried) rice, for an extra 6pp per person. 
I also toasted 20g flaked almonds and sprinkled over each serving for an additional 1 pp each! 

Ingredients
6 garlic cloves, crushed
4cm root ginger, grated
2 tbsps chicken stock
Low fat oil spray
1 onion, finely chopped
1 bay leaf
8 cardamom pods
4 cloves 
2.5cm cinnamon stick
1 tbsp ground cumin
1 tbsp ground coriander
1/4 tsp cayenne powder
1 tbsp tomato puree
600g chicken breast, chopped
3 tbsp low fat creme fraiche
3 tbsp low fat natural yoghurt
150ml chicken stock
2 tsps garam masala



Method

1. Place the ginger, garlic and 2 tbsps chicken stock in a blender and whiz to a paste. 
2. Heat a large non stick pan, spray with the oil and add the onion, bay leaf, cardamom, cloves and cinnamon stick. Cook for 3-4 minutes, stirring occasionally. 
3. Add the cumin, coriander, cayenne and tomato puree. stir to combine. stir in the chicken and coat with all the spices. 
4. Stir in the remaining ingredients and bring to a simmer for 20 minutes or until the chicken is cooked through. 
5. As I said I dry fried 20g flaked almonds and sprinkled over the curry to add texture. 
6. Serve with rice and mushrooms.
