Mushroom and Walnut pasta


This was a quick and easy meal, full of flavour. Tip - buy a good quality pasta - a treat pasta if you like! One that you only use when there aren't many ingredients! We bought a delicious brown Tortiglioni

Mushroom and Walnut pasta

120g Pasta

2 punnets of mushrooms - I used a chestnut and an oyster

25g walnuts - roughly chopped

4 tbsp grated parmesan

2 tbsp half-fat creme fraiche

2 tbsp chopped flatleaf parsley

1. Cook the pasta in a large saucepan of lightly salted boiling water until al dente. Drain well and return to the pan.

2. meanwhile, chop the mustrooms and fry until softened then mix them in a bowl with the walnuts. Add the parmesan, creme fraiche, parsley and season.

3. toss the mixture through the pasta and heat gently until piping hot. Scatter with some more walnuts and shavings of parmesan for extra points!

  1. I love pasta! However I'm not dying about mushrooms. To me, this is not a very attractive dish! Will give this a go and see!!!!
