Moroccan Harira Soup


Love this time of year...... Time for tasty, quick and filling soups. 

Over the next few days I'll be blogging 3 of my current favourites.... Starting with Moroccan Harira. 
This is vegetarian but you can use chicken stock instead of veg stock and at point 3, add a chicken breast, which has been cooked and chopped. 

5 pp per serving for those counting points! 

50g Puy Lentils
Oil spray
1/2 onion, finely chopped
1 clove garlic, crushed
1/4 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground turmeric
1/2 tsp harissa
1 pt veg stock
200g tin tomato (1/2)
1/2 tbsp tomato puree
200g chickpeas, drained
Juice of 1/4 lemon
Salt and pepper


Again a rubbish picutre of the final product.... I'd never sell a cookbook!! 


Made it for lunch club in work too today and it was well received. 

1. Spray the pan and fry the onion until soft, then add the garlic for a further few minutes. 
2. Stir in the cinnamon, ginger, turmeric and harissa and then the stock. Add the tomatoes, tomato puree, chickpeas and lentils  
3. Bring to the boil, reduce the heat and cover and cook for about 15 minutes. Squeeze in the lemon juice and check seasoning! And serve.....
