Tuna Niçoise salad

Hello! I'm back :) unusual to be so committed during the summer but I went back to weight watchers last week with both eyes on Christmas AND guess what? WW works if you stick to it! 
This week I lost a fantastic 5 lbs and am thrilled! Had some lovely recipes this week..... Did make a few of the old favourites from the blog but watch out for a few new ones over the coming weeks! 

Tuna Nicoise Salad
Serves 2
PP per serving 10



For the salad
2 eggs, hard boiled p, peeled and quartered
100g green beans, cooked and cooled
100g new potatoes,halved,boiled in salted water and cooled
Cos lettuce, chopped
1 shallot, very finely sliced
Tin tuna in spring water
Handful of cherry tomatoes, halved and seasoned. 

Dressing
1 tbsp Dijon mustard 
20mls red wine vinegar
40mls olive oil
Juice of 1/2 a lemon

1. Combine all the salad ingredients in a bowl apart from the egg (to avoid it breaking up) and divide between 2 plates, then arrange the egg on top. 
2. In a jam jar or air tight container, add the ingredients for the dressing and shake, then dizzle over the salad! 

Simple as that!
