Cider and Mustard Pork with Brown Rice and Buttered Greens

Cider and mustard pork

Ingredients 
Low fat cooking spray
2 pork steaks, fat trimmed
1 small onion, sliced
1 garlic clove, crushed
150ml cider
150ml stock
1 tsp whole grain mustard 
15g low fat soft cheese
120g brown rice
Green veg... I used courgette and cabbage
Knob of low fat spread


Method

Heat the frying pan with the oil spray and add the onion and garlic. So they don't burn add the cider and mustard, stirring now and again and reduce. 

When reduced transfer into a jug along with the cream cheese and stock, set the pan aside.

Boil the rice, put the butter in a pan and sauté the greens. 

In the pan used to cook the onions, re spray and fry the port chops, when the are nearly ready, add the mixture from the jug to the pan and stir until bubbling. 

Plate up with the rice and greens. 

My pork steaks were quite thick so to speed up cooking I butterflied them so while it looks like greedy guts is back, it's actually one steak cut in two!
